If you didn't have ArcGIS in the mix I'd say go with Ubuntu.  But since you do,
check what the vendor recommends to see if Ubuntu is okay.  If not then either
go with Red Hat (if you want to pay for support) or Centos (if you don't).

I don't know anything about accounting software, but my guess is that's the
other big thing to pay attention to.
